Agar is a complex polysaccharide present in the cellular wall of red algae, namely, agarophytes, including species belonging to the genera Gelidium and Gracilaria. Commercial agar is mainly extracted from species of Gelidium, Gracilaria, Acantkopeltis, Ceramium, and Pterocladia. Thus, agar can act as a fragrance fixer.
