We all know that in hyper tonic Sol. This causes an increase in blood pressure and fluid buildup in the tissues, leading to edema.

Additionally, excess sodium intake can also affect the way our kidneys function. The kidneys are responsible for regulating the balance of fluids and electrolytes in the body. When sodium intake is high, the kidneys may not be able to eliminate the excess sodium efficiently, leading to more fluid retention and edema.

There is actually no contradiction here.

Edema is not swelling of RBC but of soft tissue mostly observed in hands or feet.

For people who eat high quantity of salty food the concentration of salt increases in the blood plasma. Now the fluid outside the RBC becomes hypertonic which results in plasmolysis of RBC.
The fluids in RBC are released into the blood which gets accumulated in the intercellular spaces between the tissue which is mainly responsible for swelling of a particular organ.

And yes the RBC does shrink in the process but I hope it is clear that swelling that occurs due to edema is not with reference to RBC.
