In hemoglobin, the attachment of first O2 is difficult, but then that acts as an allosteric activator to bind the other 3 O2 molecules quickly. Thus for Haemoglobin the curve has a lag and log phase. Myoglobin has only one Fe atom so the above binding way does not take place and thus the curve is parabolic.
