Because every solids have different properties.Some diffuses in liquid but the same can't diffuse in gases.
That's because of certain favorable factor that are needed. The chemical composition is also not same.

If we remove the kinetic energy by freeze water it becomes a solid and when we put it out of fridge  it collect heat from atomesphere and get enough kinetic energy to lose its particles by evaporation. so it's particles become liquid.
