Boiling means when the vapour pressure of the molecules of a liquid have become equal to the atmospheric pressure, so they have enough energy to escape from the liquid to the environment altogether. Evaporation means when the molecules at the surface of the liquid have just aquired the energy to escape the surface of the liquid while changing their state.The point here to be noted is that boiling is a bulk phenomenon whereas evaporation is a surface phenomenon. while in boiling the whole of the liquid has attained the energy to change the state from liquid to gas, in evaporation a single layer at the surface has attained the energy enough for the particles to escape to the atmosphere which continues layer by layer which is the case seen in large water bodies.
