Read the passage given below and answer the following questions:

When a protein in its native form, is subjected to physical changes like change in temperature or chemical changes like change in pH, the hydrogen bonds are disturbed. Due to this, globules unfold and helix get uncoiled and protein loses its biological activity. This is called denaturation of protein.
The denaturation causes change in secondary and tertiary structures but primary structures remains intact.
Examples of denaturation of protein are coagulation of egg white on boiling, curding of milk, formation of cheese when an acid is added to milk.

Q. Cheese is a
  • a)
    globular protein
  • b)
    conjugated protein
  • c)
    denatured protein
  • d)
    derived protein
Correct answer is option 'C'. Can you explain this answer?

Denaturation of Protein:
Denaturation of protein refers to the disruption of the native structure of a protein molecule, leading to the loss of its biological activity. This process can be caused by physical factors such as changes in temperature or chemical factors like changes in pH.

Cheese as a Denatured Protein:
- Cheese is an example of a denatured protein.
- When an acid is added to milk to make cheese, the protein in the milk undergoes denaturation.
- The denaturation process causes changes in the secondary and tertiary structures of the protein, while the primary structure remains intact.
- The denatured protein in cheese has lost its biological activity but has acquired new properties that give cheese its unique texture and flavor.

Types of Proteins:
- Globular proteins are spherical in shape and are soluble in water. They often have specific biological functions.
- Conjugated proteins are proteins that contain a non-protein component, such as a metal ion or a lipid molecule.
- Denatured proteins are proteins whose native structure has been disrupted, leading to loss of biological activity.

Therefore, cheese is considered a denatured protein because the protein in milk undergoes denaturation during the cheese-making process, leading to the formation of a new product with different properties.
