Reason behind vegetables releasing water after adding salt:
1. Osmosis:
- When salt is added to vegetables during the cooking process, it creates a high concentration of salt outside the vegetable cells.
- This high concentration of salt outside the cells creates a hypertonic solution, causing water to move out of the vegetable cells through a process called osmosis.
- Osmosis is the movement of water from an area of low solute concentration (inside the vegetable cells) to an area of high solute concentration (outside the cells).
2. Cellular membrane permeability:
- The salt disrupts the cellular membrane of the vegetable cells, making them more permeable.
- As a result, water is able to move more easily in and out of the cells, leading to the release of water from the vegetables.
3. Cooking process:
- The heat from the cooking process also plays a role in the release of water from vegetables.
- As the vegetables cook, the heat causes the cell walls to weaken and break down, allowing water to escape more easily.
In conclusion, the combination of salt creating a hypertonic solution, disrupting cellular membrane permeability, and the cooking process all contribute to vegetables releasing water after salt is added during cooking.
