The process of fermentation involves several steps:

Glycolysis

The first step of fermentation is glycolysis, which occurs in the cytoplasm of cells. During glycolysis, glucose is converted into two molecules of pyruvate. This process also produces two molecules of ATP and two molecules of NADH.

Conversion of pyruvate to acetaldehyde or lactic acid

In the absence of oxygen, the pyruvate molecules are converted into either acetaldehyde or lactic acid. This process is catalyzed by enzymes like pyruvate decarboxylase or lactate dehydrogenase.

Conversion of acetaldehyde to ethanol

If the fermentation process produces acetaldehyde, it is then converted into ethanol by the enzyme alcohol dehydrogenase. This process also releases carbon dioxide.

Regeneration of NAD+

During glycolysis, glucose is converted into two molecules of pyruvate and two molecules of NADH. In the absence of oxygen, the NADH cannot be oxidized and, therefore, cannot be used in glycolysis. To continue the process of glycolysis, the NADH must be converted back into NAD+. This is achieved through the reduction of pyruvate or acetaldehyde, producing either lactate or ethanol, respectively.

Applications of fermentation

Fermentation has numerous applications in the food and beverage industry, including:

- Production of beer and wine: Yeast is used to ferment sugars in grains or grapes, converting them into alcohol.
- Production of yogurt and cheese: Bacteria are used to ferment milk, producing lactic acid, which causes the milk to curdle and thicken.
- Production of bread: Yeast is used to ferment dough, producing carbon dioxide, which causes the dough to rise.
- Production of biofuels: Fermentation can be used to produce biofuels like ethanol and biodiesel from organic matter.
