The Mimosa plant(or touch-me-not plant) folds the leaflets on stimulus with touch. The stimulus is passed on to the entire branch and then the whole plant with all the leaflets close. There is a loss of water from the cells at the base of the leaf.

The leaves of "touch-me-not" plant of the Mimosa family is sensitive to touch. Because, it changes its shape by changing the amount of water in the cells. So the cells swell or shrinks when water enters or exit thereby changing shape. Our hand palms contains small amount of water molecules. When we touch the leaves of "touch-me-not" plant, the water molecules sits on the leaves of "touch-me-not".Due to the more water molecules on the leaves of touch-me-not, the leaves get excess and begins to shrinks. After touching it for 15 - 20 minutes, the leaves of touch-me-not comes for same position what it was there before you came to touch it. It adjust the moisture of water present in the atmosphere.
For example, if the more weighted substance gives to your hand. You won't have the capacity to hold it. So what you would do next, you would leave it to the ground. So same as it is the leaves of touch-me-not plant do the same what I have given a example of you.
To know the proof that our hand palms contains small amount of water molecules, then rub your palms stiftly for some minutes, when you are rubbing your hand, you may feel that heat is being generated.
