The slow eating up of metals by the action of air moisture or a chemical on their surface is called corrosion.

Fat or oil containing food material left for a long time become rancid and their smell and taste changes due to atmospheric oxidation this process is called rancidity

Rancidity

1-- Rancidity is the stench of food when left open for a long time. It occurs when the fat present in the food gets oxidized.

2-- It occurs with food containing excess oil/fat

3-- It can be prevented by flushing the food with Nitrogen gas and also by reducing the temperature as rate of of oxidization is dependent on the temperature.

Main difference between Corrosion and Rancidity are :-

Corrosion:-
* Some metals reacts with moist Oxygen and chemicals for the degradation of the metals. It means it looses it's original property(strength) what it was there before it going to react.

* Corrosion can be prevented by applying paints, oiling, greasing, galvanising etc...

Rancidity:-
* When fats and oils are exposed to air (oxygen), they undergo oxidation to develop foul smell and taste.

* Rancidity can be prevented by adding antioxidants to oil, Oil food items are flushed with inert gases like Nitrogen to prevent Oxidation etc...
