There are three transformations in Hydroelectric power plant. 
Firstly potential energy (due to the hight of the water in the resevoir) to kinetic energy (the energy from the water falling a distance). 

Then kinetic energy of the water converted to mechanical energy in the turbine. 

The turbine is couple to a generator which converts this energy into electrical energy.
