A compound X of sodium is comely used in kitchen for making crispy pak...
Answer:

Identification of X and its chemical formula:
The chemical compound X of sodium commonly used in kitchen for making crispy pakoras and curing acidity in stomach is sodium bicarbonate. The chemical formula of sodium bicarbonate is NaHCO3.

Identification of Y and name of mixture of X and Y:
The substance Y used in the preparation of spongy cake along with compound X is an acid. The most commonly used acid is cream of tartar (potassium bitartrate). The mixture of sodium bicarbonate and cream of tartar is called baking powder.

Reaction taking place when X is heated during cooking:
When sodium bicarbonate (X) is heated during cooking, it undergoes a chemical reaction in which it breaks down into sodium carbonate, water, and carbon dioxide gas. The chemical equation for this reaction is as follows:

2NaHCO3 (s) → Na2CO3 (s) + H2O (l) + CO2 (g)

This reaction is exothermic, which means that it releases heat. The carbon dioxide gas produced during this reaction gets trapped in the batter of the cake and causes it to rise, making the cake spongy and fluffy.

In summary, sodium bicarbonate (NaHCO3) is commonly used in kitchen for making crispy pakoras and curing acidity in stomach. When mixed with an acid like cream of tartar, it forms a mixture called baking powder, which is used in the preparation of spongy cake. When heated during cooking, sodium bicarbonate undergoes a chemical reaction in which it breaks down into sodium carbonate, water, and carbon dioxide gas, causing the cake to rise and become spongy.
