Because zygote is formed by fusion of sperm & ovum which are produced from germ cell, and also these gametes are only capable to inherit from parents to offspring, not the somatic cell of the parents. So only zygote is capable to form embryo. Then this embryo through development produces stem cells, which converted into different somatic cells in the offsprings.
