The essential constituent of wine and beer is "A = Ethanol - C2H5OH" The Oxidation of "Ethanol" yields with an organic acid "B = Ethanoic acid - CH3COOH" which is present in vinegar.

Structural formula for Ethanol is CH3-CH2-OH. and for Ethanoic acid is CH3-C=O-OH.

When Ethanol - C2H5OH reacts with Ethanoic acid - CH3COOH in the presence of the acid catalyst makes the formation of Esters. This process in known as "Esterification Reaction".

CH3-CH2-OH + CH3-C=O-OH ===> CH3-C=O-O-CH2-CH3 + H2O.

In the above reaction, Ethanol reacts with Ethanoic acid in the presence of acid catalyst to give Esters (CH3COOC2H5) with water.


Esters are sweet smelling substance used as flavouring agents, and for perfumes.
