A barometer is used to determine the local atmospheric pressure. Mercury is employed in the barometer because its density is sufficiently high for a relatively short column to be obtained. And also because it has a very small vapour pressure at normal temperature. High density scales down the pressure head(h) to represent the same magnitude of pressure in a tube of smaller height.
Mercury has a very low vapour pressure when compared to that of water. So, it is more sensitive than water to the changes in the atmospheric pressure and rises more quickly to record the changes in the atmospheric pressure.
