Microbes such as. Lactobacillus and others commonly called lactic acid bacteria (LAB) grow in milk and convert it into curd. During growth, such bacteria produce adds (mainly lactic add) that coagulate and partially digest the milk proteins. A small amount of curd, known as starter, is added to the milk and kept at a suitable temperature, where lactic acid bacteria multiply in millions and converts milk into curd that also improves its nutritional quality by increasing vitamin B12. It also checks the growth of disease-causing microbes in the stomach.

Study the following statements regarding lactic acid bacteria (LAB) wh...
Lactic acid bacteria (LAB) are commonly used in the process of converting milk into curd. Let's analyze each statement to determine their correctness:

(i) They produce acids that coagulate and partially digest the milk proteins.
- This statement is correct. Lactic acid bacteria produce lactic acid, which lowers the pH of the milk. The lowered pH causes the milk proteins, primarily casein, to coagulate and form curd.

(ii) A small amount of curd added to the fresh milk as an inoculum contains millions of LAB, which at a suitable temperature, multiply and convert milk into curd.
- This statement is correct. Curd acts as an inoculum or starter culture, containing millions of LAB. When added to fresh milk and incubated at a suitable temperature, the LAB multiply rapidly and convert the milk into curd.

(iii) Conversion of milk into curd improves its nutritional quality by increasing vitamin B12.
- This statement is correct. The conversion of milk into curd by LAB improves its nutritional quality by increasing the availability of certain vitamins, including vitamin B12. LAB produce enzymes that enhance the bioavailability of vitamins and other nutrients present in milk.

(iv) LAB may result in acidity in the stomach of human beings.
- This statement is correct. LAB can survive the acidic conditions of the stomach and reach the intestines, where they contribute to the maintenance of a healthy gut microbiota. However, in some individuals, excessive intake of LAB-containing foods or supplements may lead to increased acidity in the stomach, causing discomfort or digestive issues.

Therefore, the correct statements are (i), (ii), and (iii) which make option (c) the correct answer.
