The correct answer is option 'B': Fatty acids and glycerol, being insoluble, are first incorporated into chylomicrons which move into intestinal mucosa.

Explanation:
The process of absorption of fats occurs in the small intestine. Here, the digestion products of fats, namely fatty acids and glycerol, are absorbed into the intestinal mucosa. From there, these products are transported to other parts of the body.

Formation of small protein-coated fat droplets in intestinal mucosa cells:
- When fats are ingested, they are initially in the form of large globules.
- These large fat globules cannot be directly absorbed into the bloodstream because they are insoluble in water.
- To facilitate their absorption, the fat globules are broken down into smaller droplets.
- The breakdown of fat globules is aided by bile salts, which emulsify the fats and increase their surface area.
- The smaller fat droplets are then coated with proteins, forming small protein-coated fat droplets called micelles.
- These micelles are able to move into the intestinal mucosa cells.

Formation of chylomicrons:
- Once the small protein-coated fat droplets (micelles) enter the intestinal mucosa cells, the fatty acids and glycerol are released.
- Inside the intestinal mucosa cells, the fatty acids and glycerol are reassembled into triglycerides.
- The triglycerides are then incorporated into specialized particles called chylomicrons.
- Chylomicrons are large lipoprotein particles that consist of triglycerides, cholesterol, and proteins.
- The chylomicrons are responsible for transporting the absorbed fats from the intestine to other tissues in the body.

Transport of chylomicrons:
- After the formation of chylomicrons, they move out of the intestinal mucosa cells and into the lymphatic vessels called lacteals.
- Chylomicrons are too large to enter the bloodstream directly, so they are transported via the lymphatic system.
- The lacteals in the villi of the small intestine collect the chylomicrons and transport them through the lymphatic vessels.
- The lymphatic vessels ultimately converge and join the thoracic duct, which releases the chylomicrons into the venous bloodstream.
- Once in the bloodstream, the chylomicrons are carried to various tissues, where they deliver the absorbed fats.

Conclusion:
In summary, the correct statement regarding the absorption of fats is that small protein-coated fat droplets are formed in intestinal mucosa cells. The other statements are all correct, including the transport of chylomicrons into lacteals, the release of absorbed substances into the venous bloodstream, and the insolubility of fatty acids and glycerol in forming chylomicrons.
