The reason is that gravity pulls water down toward the earth's center of mass. Plants use water in part for photosynthesis and so it needs to be transported to where there is light. Most water enters the roots of the plant underground or at least usually lower than the areas where photosynthesis may occur (leaves and stems etc…)The sun is in the opposite direction (during daylight) of the gravitational pull from where water entered the plant and so must be transported against the pull of gravity.
