Cellulose and starch are both polysaccharides composed of glucose units, but they differ significantly in their structural properties. Starch can form helical secondary structures which are capable of encapsulating iodine molecules, causing a blue coloration when starch is tested with iodine. This is a common test for the presence of starch in labs. Cellulose, on the other hand, does not form such helical structures and therefore cannot hold iodine molecules, not showing any blue color when tested with iodine.
