It is correct, interstitial cations are also present but the colour is due to the electrons.

In NaCl, it is due generation of F-center ie. electron in place of a cation.In ZnO, it is due to presence of electron in interstitial sites. The anion loses electrons and forms gas leaving the electrons behind in the interstitial sites.Both these defects are metal excess/ anionic deficiencies.
