Yogurt ( Yoghurt) is a preserved milk product made by the bacterial fermentation of milk . It has a distinct taste and a thick texture than milk . It is made by fermenting whole milk with a mixture of Lactobacillus bulgaricus , Streptococcus lactis and streptococcus thermophilus at 40- 45 degree Celsius.
The lactose in the milk becomes lactic acid when it is fermented . Lactic acid acts on the protein in the milk to make yogurt ( Yoghurt) thick and sour .
